L'entremets Matisse Vanilla Citrus
"In his writings and works, Matisse evokes his love of vanilla and his taste for citrus fruit. So I developed an entremets inspired by the crĂŞpe Suzette, with a generous vanilla cream sublimated by orange. It's an indulgent, regressive pastry. As for the macaron, it's full of freshness, with notes of vanilla, mandarin, clementine and yuzu", explains Julien Alvarez.
